So there's no way within the game to toggle the "run" and "zoom" triggers, but I found out that the option is implemented after all. It was even in the demo 
. It can be activated hex editing the System<user-id>.sav file:
It's in C:\Users\(Username)\Local Settings\Application Data\Shenmue3\Saved\SaveGames for me, although it may be in Users\(Username)\AppData\Local\Shenmue3\... or similar for others.
